Wash the sweet potatoes well, peel them and cut them into slices or sticks.
Place them in a bowl of cold water to remove the starch and let them soak for at least 10 minutes. Drain them, pat them dry with paper towels and transfer them to a bowl. Add the extra virgin olive oil, salt, paprika, corn flour and potato starch. Mix well so that all the potatoes are evenly coated.
Place them on a baking tray lined with parchment paper, add some thyme and bake at 200°C (fan-assisted) for 35 minutes. Brush with orange blossom honey before serving.
