Colour: light to dark brown, with grey-green or amber tints.
Aroma: strong and pungent. It recalls ivy leaves, bitter herbs and cocoa beans.
Taste: similar to the aroma, bitter and lingering, with hints of carob beans and gentian root.
Production area and period: strawberry tree honey is made in central-southern Italy. The small, bushy tree has evergreen leaves and spherical yellowish-white flowers, produced from October to January. Its ideal habitat is the Mediterranean maquis (Tuscany and Sardinia) and its nectariferous flowers attract bees at times of year when few other flowers are available.
Tips for use: its bitter flavour blends well with cardoons, artichokes and bitter vegetables, and provides a delicious contrast with mature cheeses (especially sheep’s cheeses) or full-fat, sweet, fresh cheeses such as mascarpone. It is also ideal with coffee, bitter herbal infusions or detox teas made from roots and barks.
