Serves 4:
  • 8 eggs
  • Sunflower honey
  • Salt and pepper

Heat a little sunflower honey (instead of oil or butter) in a small non-stick pan. Crack the eggs into the pan and cook over a low heat for a few moments.

Continue cooking for as long as required, depending on how you like your eggs. Every now and again, spoon a little of the hot honey from the pan over the yolks, so they cook on top and absorb the flavour.

Remove from the pan using a fish slice, transfer to plates and season with salt, some freshly ground pepper, and serve immediately with fresh bread.
