Serves 4:
- 1kg of pork loin
- 100g of chestnut honey
- Garlic
- Bay leaf, parsley and sage
- Extra virgin olive oil
- Salt and pepper
- A few teaspoons of mustard for the sauce
Method
Chop all the herbs and add to the salt, pepper and crushed garlic, mixing well. Rub this mixture all over the pork loin, then leave it to rest for around an hour. Before placing in the oven, drizzle all over with the chestnut honey, covering the meat completely. Place in a preheated oven at 190° for 20 minutes, then turn the temperature down to 160° and continue cooking for another 40 minutes. Remove from the oven and leave to rest for around a quarter of an hour before serving the meat sliced. Take the cooking juices from the meat and mix with a few teaspoons of mustard and honey for a delicious sauce to garnish each plate and give added flavour.
