Sea bass in a pollen and sesame crust with honeydew honey

Ingredients (serves 4)

  • 400g sea bass fillets
  • Approximately 4 tablespoons breadcrumbs
  • 1 tablespoon grated Parmesan or pecorino cheese
  • Sesame seeds
  • Pollen
  • Honeydew honey
  • Extra virgin olive oil, salt and pepper to taste
  • Oregano and marjoram to taste
  • Pachino cherry tomatoes for garnish

Preparation

Prepare the breading with breadcrumbs, sesame seeds, oil, salt, and pepper.

Add oregano and marjoram to taste.

Coat the sea bass with the breadcrumb mixture and cook in a non-stick pan with a drizzle of oil until golden brown.

Add a few teaspoons of wild honey and a little pollen.

Serve and garnish with cherry tomatoes, wild honey, and pollen.
