Roll out the dough and place it in a round baking pan with a diameter of about 22-24 cm that you have previously lined with parchment paper. Place the Brie cheese on the dough and cover it with the chopped walnuts, leaving the edges free, which should be brushed with a little water and egg yolk. Season with salt and pepper and bake at 200°C for 20 minutes in a preheated oven. In a bowl, prepare a dressing with lemon juice, oil, salt, and pepper. Add the honey and mix well. Serve the quiche while still warm, on a bed of arugula or salad, if desired, and drizzle with the oil and honey dressing.
