Production area and period
Our forest honey is collected in late summer in the woodland areas of various regions along the length of Italy: Piedmont, Emilia Romagna and Abruzzo.
Fascinating fact: it’s also known as honeydew honey, because it’s the only variety made not from flower nectar, but from honeydew, a substance secreted by plant-sucking insects such as citrus flatid planthoppers or other Auchenorrhyncha Hemipterans leafhoppers that absorb nitrogenous substances.
Tips for use
Exceptionally good for sweetening fresh cheeses, milk and other dairy products. Ideal in black tea and for recipes with dark spices and vegetables. Also a revelation on pancakes and mascarpone cheese. Recent studies indicate that this honey is particularly rich in antioxidants.
