Create an emulsion with orange honey and filtered orange juice to give the honey a more liquid and malleable consistency. Add orange zest for fragrance. Chop the figs and dried apricots, shell the walnuts and break them into large pieces with your fingers.
Now assemble the cups: in a glass or small glass cup, alternate the ingredients in layers. Place two tablespoons of Greek yogurt at the bottom, followed by a generous tablespoon of honey and orange sauce, dried fruit (walnuts and sliced almonds) and dried fruit (figs and apricots), another two tablespoons of Greek yogurt and finish by sprinkling with pollen and sliced almonds. You can replace the dried fruit with hazelnuts, pecans or macadamia nuts. If you like, you can replace the dried fruit with other fruit (papaya or red berries) or even choose to use fresh fruit. The crunchy texture can be achieved not only by using nuts and pollen, but also by adding puffed or whole grain cereals.
