Whole wheat tartlets with wildflower honey and pollen

Ingredients for 6 cupcakes:

  • 150g organic whole wheat flour
  • 25g potato starch
  • 8g baking powder
  • 1 pinch of salt
  • 45g wildflower honey
  • 1 egg
  • 90g milk
  • 3 teaspoons pollen

Preparation

Place the flour, salt, and baking powder in a bowl and mix. Add the egg, milk, and honey and mix with a flat whisk. Add the pollen and mix until the mixture is smooth and lump-free. Place a spoonful of the creamy mixture into each muffin cup and garnish with a pinch of pollen. Bake at 170°C in a static oven for about 20 minutes. Remove from the oven and leave to cool. Enjoy as a snack or for breakfast.
