Taste

Not very sweet, overtones of soft toffee and liquorice. Vaguely salty aftertaste

Production area and period

Collected during summer and autumn in central-southern mainland Italy and on the Italian islands.

Tips for use

Perfect with pasta and meat dishes and for adding flavour to fish or mixed vegetables, either pan-fried or served in vinaigrette with oil and lemon. Excellent in herbal teas and hot milk, and with medium-mature cheeses like pecorino. Great with finger foods and sushi. Also a revelation in bean and pulse dishes and in soups.

Our beekeepers put their bees’ welfare first and only harvest honey if their reserves are high enough to ensure their survival.
